Introducing Colt Sage Waltrip

2013 10 22 - Colt 04On Wednesday of last week, Colt Sage Waltrip was born to Chris and Samantha in Corpus Christi, Texas.  Colt is a few weeks premature and is currently in the NICU.  The doctors and nurses say he’s doing great and will hopefully be able to go home in sometime this week.

I can’t wait to meet Nephew #2 when I go home at Thanksgiving!

My nephew Cody is fearless.  He climbs up on nearly everything (including the roof of the house on occasion), he eats nearly anything you put in front of him, and he hasn’t met an animal that isn’t a friend.  Not to mention that when we go out to the ranch and shoot guns, he wants to shoot anything we’re shooting with too.

… but GoDaddy ain’t one!

So, if you’re seeing this post, and the website doesn’t look quite like you remember it, then the transfer went through and welcome to the newly rehosted LeeTexans.com.

If you don’t remember, way back in last year, both houses of Congress made a push to pass internet censorship bills (SOPA & PIPA).  When this happened, GoDaddy came out early to support these bills.  They later retracted their public support when the public overwhelmingly rejected the idea.  GoDaddy has stayed quiet about it, but the word is they still support the federal government going to such extremes.

When this all happened, I decided not to renew my web hosting service with them (renewal was still over a year away) and look for a new hosting platform for my website.  Today, I signed up with BlueHost and I’m now in the process of migrating and updating the website.

I know I don’t keep track of the website all that often and it’s gotten pretty stale, so hopefully with this migration effort, I’ll finally get around to making some fairly decent updates.

And yes Mom, I’ll put the family tree info back up.

One year ago today, my sister, Samantha Courtney Lee, married Christopher Scott Waltrip at Woodrose Winery in Stonewall, Texas.  One year down, and a whole lot more to go!

And later this year, we will be welcoming a new bundle of joy into the family!  Congratulations again Chris and Samantha!  And Cody too!

Cajun Burgers

This recipe has become the main burger recipe I use for cook-outs.  Everyone seems to like them, and in my last cook-out, the Turkey Cajun Burgers disappeared faster than the regular Cajun Burgers.

Cajun Burgers
 
Recipe type: Main Course
Ingredients
  • 3 pounds of ground beef
  • 1 pound of pork Andouille sausage
  • 1 Tbsp of Cajun Seasoning
  • Worchestershire sauce
Instructions
  1. Remove the sausage casings from the Andouille sausage.
  2. Mix the sausage, ground beef together, and seasoning together.
  3. Add Worchestershire sauce to taste.
  4. Form mixture into patties.
Notes
Will make about 12⅓ lb. patties. For a Turkey-version of this recipe, substitute: - Ground Turkey for the Ground Beef - Chicken Andouille for the Pork Andouille - Add 1 egg into the mixture to allow it to stick together and form the pattie.
