Gibblet Gravy

So, this past Christmas, I watched my grandmother make the gibblet gravy for the turkey.  And of course, there’s no measuring of anything.  Just add stuff until it looks and tastes right.  Over the course of the past few years, she’s been passing off various cooking duties to other people, but this is pretty much the last recipe she does herself.  Largely since everyone else is busy fixing all of the other food.

Gibblet Gravy
 
Recipe type: Sauce
Ingredients
  • Gibblets from the turkey
  • Broth from the turkey
  • Can of chicken broth
  • Celery (chopped)
  • Onion (chopped)
  • Flour
  • Salt
  • Pepper
Instructions
  1. Boil turkey gibblets. Cut them up and set aside.
  2. Take some broth from the turkey. Strain the broth. Heat in pot on the oven.
  3. Add salt and pepper to taste. Stir in (a little at a time) 3-5 big spoon fulls of flour.
  4. Add ~1/2 can of chicken broth (depends of how much turkey broth used).
  5. Add in gibblets along with chopped celery and onion.
  6. Stir on high heat till it thickens.

Blackened Seasoning

I generally use this seasoning to spice up chicken and fish dishes.

Recipe type: Spice Mix
Ingredients
  • 2 Tbsp paprika
  • 4 tsp salt
  • 4 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp cayenne
Instructions
  1. Combine all ingredients thoroughly & store in a glass jar.
Notes
Makes about ½ cup.

 

All-American Baked Beans

My friend’s Paul and Adrienne brought this over for a cookout last year and everyone loved it so much, I asked for the recipe.  I’m not big on beans, but this has become my favorite way to cook them.  Delicious!

All-American Baked Beans
 
Recipe type: Side Dish
Serves: 8 - 10
Ingredients
  • 2 28-oz cans Bush’s Original Baked Beans
  • ½ cup brown sugar
  • ½ cup ketchup
  • ½ cup chopped onion
  • ½ cup chopped green pepper
  • ⅓ cup honey
  • 2 tsp yellow mustard
  • ¼ lb. bacon (cut into small strips
Instructions
  1. Preheat oven to 375 degrees.
  2. Spray a large casserole dish with Pam.
  3. Mix all ingredients except bacon.
  4. Spoon into casserole dish.
  5. Place bacon over top.
  6. Bake for 1 to 1-1/2 hours or longer (the beans become thicker the longer they bake).

 

 

 

Auntie’s Chocolate Peanut Butter Chip Cookies

Personally, Auntie’s sugar cookies are great, but I prefer her chocolate peanut butter-chip cookies.

Recipe type: Dessert
Ingredients
  • 1 ¼ cup butter, softened
  • 2 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 cups flour
  • ¾ cup cocoa
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cup (12 oz.) peanut butter chips
Instructions
  1. Preheat oven to 350.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs and vanilla; beat well.
  4. Combine flour, cocoa, baking soda, and salt in a separate bowl.
  5. Gradually blend flour mixture into creamed mixture.
  6. Stir in peanut butter chips.
  7. Drop by tsp. onto ungreased cookie sheet.
  8. Bake 8 – 9 minutes.
  9. Cool slightly – remove to wire rack.
Notes
Makes about 4½ dozen cookies.

 

 

 

Tiger Butter

One of my favorite Auntie recipes.

Auntie’s Tiger Butter
 
Recipe type: Dessert
Ingredients
  • 1 pound white chocolate
  • ½ cup chunky peanut butter
  • 6 ounces (1 cup) semi-sweet chocolate morsels
Instructions
  1. Line a 15½ x 10½ inch jelly-roll pan with wax paper.
  2. Break white chocolate into 1-inch pieces in a 1 ½ quart microwave-safe bowl.
  3. Microwave on high for 1 to 2 minutes or until melted. Stir until smooth.
  4. Add peanut butter and microwave on high for 2 minutes until melted; stir until smooth. (Microwave an additional 30 seconds, if needed.)
  5. Spread mixture into prepared pan.
  6. In a 2 cup microwave measuring cup, melt chocolate on high for 1-2 minutes.
  7. Pour melted chocolate over peanut butter mixture; swirl through with a knife; refrigerate.
  8. When firm, cut or break into pieces. Makes about 2 pounds. (about 32 servings)
