- 4 eggs
- 2 cups milk
- 1/2 cup sugar
- 1 Tbsp melted gelatin
- 1 tsp vanilla
- 1/4 tsp salt
- 2 cups cooked rice
- Pre-heat oven to 325°.
- In a medium bowl, beat eggs, blend in milk, sugar, gelatin, vanilla, and salt.
- Stir in cooked rice, pour into greased casserole dish.
- Bake for 35 minutes.
- Gently stir from the bottom, continue baking for 20 – 25 minutes.
- Sprinkle with cinnamon or nutmeg if desired.
